
2024 Baking Challenge Week 2 – Tasty Toaster Tarts

Welcome to the second week of our 2024 Baking Challenge! I am not a professional baker, but I do love to bake! I’m kind of a mess in the kitchen, but really wanted to challenge myself to bake more often, and to explore new recipes and skills, so the 2024 Baking Challenge was born!
We are baking on a budget, cutting corners to make things easier and more accessible, and altering recipes for food allergies and picky eaters (seriously, my kid doesn’t even like pancakes!)
Every week on Wednesday I will post the shopping list to our Facebook and Instagram accounts! Every Saturday at 9am Central, I will post a new video. These beginning videos are going to be shaky, but I’ll get the hang of it eventurally! I can’t promise not to be awkward or ramble, that’s just who I am!

Since week one was such a challenging recipe, I really went more relaxed for week two. I needed a win, and don’t we all!?!?! Who doesn’t love a good toaster pastry? The fact that you can store these so well is a win in my book. I wish I’d known about this recipe years ago when my adult kids were little, it would have been so fun to take a Sunday to make custom breakfast tarts for the following week!
This recipe wasn’t tricky, other than figuring out how much filling to add. I didn’t add nearly enough. This pastry is a lot like a pie, and if you’ve ever made a pie before, then you know that adding too much filling can make quite a mess, with overflowing, sticky filling and a blown out crust. I errored on the side of caution, but I think I was a little too cautious. I probably could have doubled my filling and spread it more and been perfectly fine.
One again, the winning tool for this bake was this rolling pin set, while not my favorite rolling pin to use, the thickness guides and the mat are really a huge help!
Another mistake I made was to use regular cinnamon sugar instead of their cinnamon-brown sugar mix. What can I say? I’m a lazy baker and I already had regular cinnamon sugar on hand. I can see now that the brown sugar would have added that gooey element that mine was sadly lacking.

And it wouldn’t be me in the kitchen without another mistake. NOT brushing my pastry with egg before adding the filling. I got lucky and my crusts stayed together, but that is probably due to my sad filling ratio.
All in all, I would call this on a win for sure! I do plan on making this recipe again so that I can try out some more flavor combinations. Perhaps a chocolate crust? Maybe a PB & J filling?
